I had a taste for city chicken not too long ago (I live in Arizona) but I couldnt find a butcher who knew what city chicken was. whenever that came out I knew dinner was gonna be good. Instructions. Ill probably serve with mashed potatoes, corn and coleslaw or the traditional cucumber vinegar salad. Pour it on, then bake additional 15 minutes. It definitely is a small world! Its not chicken thoughits pork and vealthey started calling it city chicken because back in the day chicken was more expensive than porkso they used pork and veal instead and called it city chicken. My mom made this a lot. Cubes should be touching but NOT crammed together!
